In I was sitting in a plane, returning to Vancouver from a visit to my old home-town Cornwall. Up there in the sky, a powerful yearning to start a business invaded my whole body. But what business I didn't want to do management consullting or administration any more, a field I had enjoyed for years. What could I do Maybe a week or two went by. A few years earlier, my daughter had been diagnosed with celiac disease. It started with her getting a blood transfusion to save her life. That changes a Mum. A woman I worked with, Enid, insisted that I read a book about a special diet for celiacs. That book changed me, too. I became the mummy bear of gluten-free and even grain-free cooking. The business idea washed over me. I would make the most nutritious, easy to digest, delicious and safe breakfast for celiacs and others with gastrointestinal problems. My plan was to reduce the hours at my job as director of the North Shore Keep Well Society, and get the business started. I started by taking a Food Safe course. I told another colleague about my business idea, and she insisted I take another course about Hazard Analysis Critical Control Points that was being held that very weekend. I did. That experience changed me, too. The host and teacher were from the Small Scale Food Processor Association. I joined right up. Then, the Keep Well Society lost a big chunk of funding and suddenly I was without a job. I took advantage of a tremendous program for EI recipients about starting my own business. After a couple of months researching and writing a business plan I rented space in a commercial kitchen and got going. The owners of the kitchen coached and taught me for nine months. That first commercial kitchen had to close when the new owner of the building wanted us out so he could put in an automotive showroom. Then I found my present kitchen in Delta. It's a shared gluten-free kitchen and I've been happy to cook there for more than two years.
